Most brewing software has one field for tea and one for sugar. If you ferment on something else, you spend the rest of your record-keeping working around two words.
Tea, a herbal infusion, coffee, yerba mate, a juice, a grape must, or the blend you named yourself. There is a list of suggestions and you are free to ignore it. What you type is what your recipes, brew sheets and records say from then on.
Honey is roughly 82 percent sugars and the rest is mostly water, so 80 g/L of it does not deliver 80 g/L of sugar. The recipe shows both figures: the amount you weigh out, and the fermentable sugar the culture actually receives. Measured your own lot? Put your number on the item and it wins.
Must and juice stay in the vessel where tea is steeped and strained back out. Give yours a share of the fill and BrauMo counts it: the water is worked out around it, the litres come off the right stock item, and the batch adds up to the volume you planned.
A product you sell as alcoholic is not a failed non-alcoholic one. Say what your ceiling is on the recipe, and the batch keeps that figure with a note of whose it is. Your records are then judged against what you declared, not against a claim you never made.
