The records that make a producer defensible

A registered producer must keep systematized, auditable records of the production process (Decreto 12.709/2025) and stay within the official kombucha parameters (IN MAPA 41/2019). BrauMo keeps those answers where they happen. Being compliant stays your work; no software changes that.

pH and acidity, on the batch

A reading lands on the batch with its date and time, against the range your recipe expects. Brazil's official window for kombucha has been fixed since 2019: pH between 2.5 and 4.2. When a value drifts out, the batch says so before the pallet leaves, not after.

Temperature and time

From brew day through fermentation to packaging, the batch carries its own timeline. How long the first fermentation ran and at what temperature is a fact you look up, not a memory you defend.

Lots, validade, traceability

Every packaging run gets a lot with its best-before date. From a bottle on a shelf back to the tank, the readings and the culture that made it is one search, not an afternoon in folders.

Which mother a culture came from and which generation it is, recorded as you harvest and pitch. When a flavour changes, the lineage is the first place you look, and it is actually written down.

Questions Brazilian producers ask first

Does BrauMo make my production MAPA-compliant?
No, and no software does. Registration, good practice and the standards themselves stay your responsibility. What BrauMo does is keep the records those obligations rest on: organized, dated, tied to the batch, and ready to show. The difference an inspection feels is between an answer you look up and an answer you reconstruct.
Which records does it actually keep?
Readings (pH, acidity, temperature) with date and time on the batch, the batch timeline from brew day to packaging, lots with best-before dates, the culture's lineage across generations, stock movements, and the sales paperwork: delivery notes and invoices. Everything exports as CSV or Excel whenever you want it.
Does it support water kefir?
Yes. Water kefir runs in the same app as your kombucha: the same batches, readings and records, included in the flat price rather than sold as a module. In Brazil, water kefir has no identity standard of its own yet; it falls under MAPA's general beverage rules. And vinegar production is in there too.
Does it issue nota fiscal (NF-e)?
No. BrauMo issues its own commercial invoices and delivery documents; the nota fiscal stays in your fiscal software, the same way the books stay with your accountant. BrauMo is where production records live, and it does not pretend to be your fiscal system.
Why is the price in US dollars?
The Latin America price is US$29 per month, billed annually. Your region follows your billing country, not the language of this site, and checkout runs through Polar as merchant of record. Every feature is included at every price. There is no Brazil surcharge and no feature Brazil does not get.
Do I need internet at the fábrica?
No. BrauMo runs on your own computer and serves every phone and tablet on your local network. Readings, batches and documents work fully offline. The optional AI assistant is the one feature that needs a connection, and the app is fully usable without it.
