A kombucha food-safety plan turns on two numbers: how fast the batch acidifies, and how much alcohol it carries. BrauMo records both against the batch, dated, alongside the calibration, cleaning and traceability records an auditor asks to see. It documents and reports. Being compliant stays your call and your auditor's.

Two control points, recorded every batch

KBI-aligned kombucha plans put acidification first and alcohol second. BrauMo holds a pH curve per batch rather than a single end reading, so you can show when the batch crossed its limit, not just that it eventually did. Alcohol readings sit on the same batch record, with the packaging run linked to them.

  • Acidification. pH readings with sanity bands, timestamped against the batch and the vessel.
  • Alcohol. Readings tied to the batch and to the lot that shipped from it.
  • Calibration. Meter calibration logged, so a reading has a provenance.
  • CAPA and recalls. Corrective actions and mock recalls documented in the same place.

Already running an ERP or accounting system?

Keep it. The batch record is the part most ERPs have no place for, and it is the part an auditor asks for first. BrauMo can run as that record alone, with the selling and invoicing side switched off, so nothing you already own gets replaced and nothing gets typed in twice.

Only what you use

Setup asks what your production does and shows only that. Every feature is in the licence either way, so switching one on later is a click, not an upgrade and not a new quote.

Your records leave with you

Batches export as CSV, HACCP records and certificates of analysis as PDF, and the whole database as a file you keep. It runs on your own hardware, so the records were never anywhere else.

One thing to know

Traceability runs one step back and one step forward. BrauMo can only show who received a lot if the deliveries are recorded here. If they live in your ERP, that half of the trail stays there.

What it does not do

BrauMo does not certify anything, does not write your food-safety plan for you, and never blocks a batch. It advises, flags and records. If a subscription ends the app becomes read-only, so a brewery always keeps its own HACCP history. For the underlying method, read the two control points that matter.
