Culture lineage: keeping a starter alive, and knowing which one went into the batch
Pitching 20 percent mature starter assumes you have 20 percent mature starter, on the day you need it, every time. That is not luck. It is a small production line of its own, with its own schedule, its own go/no-go and its own records.
The liquid starter is the working culture, and a sharper, lower-pH one does more per litre. That leaves the question a producer hits on the second brew day: where does the next one come from, how do you know it is still good, and how do you say which starter went into which batch when somebody asks. This guide is about running the culture as a line rather than keeping a jar.
A culture is a population, not an object
Every time you pitch from one vessel into the next, you carry a living population forward. That is a generation. The balance inside it shifts with how you treat it: how warm you keep it, how often you feed it, how much you draw off, how long it sits between feeds.
So "our culture" is not one stable thing that exists in the corner. It is a line with a history, and the history explains the batches. A line that has been running hot and hungry for four months behaves differently from the same line three months ago, and the only way to see that coming is to have written the numbers down as you went.
The supply problem nobody plans for
At 20 percent of volume, a 500 litre tank needs 100 litres of mature starter waiting for it. That is not a jar on a shelf, and it is the point where homebrew habits stop transferring. There are two ways to have it ready.
- Hold back from finished batches. Simple, and it costs you sellable product every time. Workable when volumes are small or irregular.
- Run a dedicated starter vessel that you feed and draw from on a rhythm. It scales, it does not eat into finished stock, and because it is always the same vessel you can actually learn its behaviour.
The dedicated vessel is what turns starter from a worry into a schedule. You draw a volume, top up with fresh sweet tea, and let it re-acidify. How long that re-acidification takes is what sets your brew cadence, so it belongs on the same plan as your tanks. If you brew on Tuesday, the starter has to be ready on Tuesday, which means it was fed on a date you can count backwards to. Planning tanks and not planning starter is how a brew day arrives with nothing sharp enough to pitch.
The go/no-go before you pitch
Treat the starter as an ingredient that can fail inspection, because it can. Four checks, and they take a minute.
- pH. The one number. A mature starter sits well below the batch you are about to start, and the sharper it is the more work it does per litre. Measure it, do not assume it from the calendar.
- Time since the last feed. Too young and it has not acidified enough to protect the batch. Too old and it has been sitting hungry, which is its own kind of stress.
- Activity. After a feed a healthy line shows visible signs of working. A line that goes quiet after feeding is telling you something before the batch does.
- Smell and appearance. Sharp and clean is right. Solvent or nail-polish notes point at stressed yeast. Fuzzy growth, colours, anything dry and mouldy: discard, do not rescue.
Then make it a decision rather than a shrug. If the starter is not ready, you either pitch more of it, wait, or brew from the backup line. Whichever you choose is a decision worth one line in the record, because three months later it is the line that explains the batch.
What drifts over generations, and when to start fresh
Lines age in ways that are slow enough to miss day to day.
- Acidity creeps up in a vessel that is kept warm and drawn from continuously, pushing the line toward vinegar territory over months.
- The population rebalances with temperature and feeding rhythm, which shows up as a change in how fast the pH falls rather than as anything visible.
- Response to feeding slows. This is the signal that matters: a line that used to re-acidify in a known window and now takes noticeably longer, and does not recover after a clean feed, is telling you it is done.
There is no generation count at which a line expires, and anyone who gives you one is guessing. You restart when the measurements say so, which is the actual reason to keep the measurements. Restarting means building a new line from a known good source and running it alongside the old one until it performs, not swapping on brew-day morning.
Never run one line
A single starter vessel is a single point of failure for the whole brewery. If it is contaminated, overheated, or accidentally emptied, production stops until a new line matures, and that is weeks, not days.
Run at least two vessels. In a small brewery they will sit in the same fermentation room and be fed in the same session, and that is fine: nobody is building a second room for starter, and splitting the feeding across days only doubles the work. What you separate is the vessel and the handling. Clean between them, do not carry the same hose or tool from one to the other without cleaning, and where you can, feed them from separate draws rather than splitting one batch of tea across both.
Be honest about what that protects against. Two vessels in one room cover the failures that reach one of them: a contaminated feed, a vessel drawn down too hard, one that simply goes off. They do not cover an event that takes the whole room, a temperature failure over a weekend being the obvious one. The answer to that is not a second room, it is a small preserved or cold-held culture from a known good generation kept outside the production area. A fridge is enough, and it is the only backup that survives a bad weekend.
Lineage as a record, and why it earns its keep
Each batch should name the starter it was pitched from. Each starter feed should name what it came from. Done consistently that builds a chain: this batch came from line B at generation nine, which came from line B at generation eight, back to a source you can name.
The day it earns its keep is the day something is wrong. A batch comes back sour beyond spec, or a customer complains, or a reading looks impossible. The first useful question is whether anything else shares its parentage. With lineage you can answer it in minutes and quarantine precisely. Without it you are choosing between recalling everything that could be related and recalling nothing and hoping.
It is the same logic as ingredient lot numbers, applied to the one ingredient that is alive and that you made yourself.
What to write down
- Line identity. A name for each vessel or line, and its generation or feed number.
- Each feed. Date, volume drawn off, volume and composition topped up.
- pH at feed and pH at pitch, and the temperature the line is held at.
- Each pitch. Which batch received it, how much, and what share of the batch volume that was.
- The go/no-go and who made it, including what you did when the answer was no.
- Restarts. When a line was retired or rebuilt, from what, and why.
What an auditor asks
- Where did the culture in this batch come from?
- What did you check before pitching it, and what would have stopped you?
- If this line were contaminated, which batches would be affected?
- When did you last retire a line, and what told you to?
The third one is the question lineage exists to answer, and it is the one most small breweries cannot answer quickly.
